Sunday Brunch for the Bunch of us...

I'm trying to make Sunday brunches a thing for our little family.  Who doesn't get tired of the same old pancakes, French toast, bacon and eggs though?  Little known fact, I'm not a huge fan of pancakes.  I don't hate them, I just hate making them.  They never feel like anything special, we each like our pancakes different ways, which usually means multiple batches of pancakes for me...on my only day off!  I also really appreciate Sunday dinners, so cooking large batches of food in the morning, the clean up, and time consumption just isn't appealing.  So how did I combine our different preferences without making separate batches... fluffy, yet crispy pancakes in under 10 minutes???  I found a bunch of recipes that I loved, and adjusted them accordingly.

INGREDIENTS

  • 1 1/2 cups rising flour
  • 3 1/2 teaspoons pre-made pancake mix(cheat code)
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon 
  • 4 tablespoons butter, melted (2 for mixture, 2 for pan)
  • 1/2 cup fresh berries
  • 1/2 tablespoon powdered sugar




DIRECTIONS
  1. Sift dry ingredients into your mixing bowl.  Sifting is the key here and important for fluffy pancakes.
  2. Add milk, egg, melted butter, and vanilla extract. 
  3. Fold in and stir to mix with large wooden spoon until combined. Don't whisk or use electric mixer here.
  4. OPTIONAL: Add mashed berries to mixture. (I separated a quarter of the mixture to add strawberries to my eldest sons pancake).
  5. Cook pancakes on pan greased with BUTTER, with low heat.
  6. TIP: Because these pancakes are so thick, use your spatula to shape them and get a pretty good uniform look.
  7. Flip when the pancake begins to look cooked through and bubbly.  Thick, fluffy pancakes are only yummy when they're cooked thoroughly throughout.
  8. OPTIONAL: As each pancake is ready, add a touch of butter and sprinkle of powdered sugar.
  9. Enjoy!
